Eggplant Casserole

The Easier Eggplant Casserole

Ingredients:

1 jar prepared pasta sauce

1 lb. ground beef, pork, or Italian sausage

1 Onion

3 cloves garlic

2 tbsp olive oil

1-2 Eggplants slice ¼ in.

1 cup grated mozzarella

Preperation:

Sauté onion and garlic in olive oil.

Add meat and brown.

Add pasta sauce and simmer 20 minutes.

Layer meat sauce, eggplant and cheese.

Top with Béchamel Sauce

Bake 350 for 45 minutes or until béchamel sauce is a nice brown color.

Let cool for 10 to 20 min before serving
