Easy Greek Moussaka
Ingredients:
1 can Tomato paste
1 can Tomato sauce
1 can Tomato Puree or Crushed Tomatoes
2 tbsp Olive Oil
1 large Onion diced
2 Garlic cloves minced (more if you like)
1/2 cup Red Wine
1 tsp Cinnamon
Salt & Pepper to taste
1 pound ground lamb, pork or beef (or a combination)
1 cup grated Kefaltoyri or Parmesan cheese
Preparation:
--Meat Sauce-
Sauté onion until soft and garlic a cook a few more minutes.
Add red wine simmer until reduce 1/3.
Add tomato paste stir and cook about 5 more minutes.
Add cinnamon, allspice, salt, pepper, tomato sauce, and puree.
Let simmer on low for at least one half hour.
Brown ground meat and add to sauce.
Simmer at least another ½ hour.
-Assemble the Casserole-
Alternate layers of meat sauce, cheese, and eggplant in a buttered 9 x 13 casserole.
Top with Béchamel Sauce
Bake 350 for 45 minutes or until Béchamel sauce is a nice brown color.
Let cool for 10 to 20 min before serving.
